    The teenagers at my house are totally on board with more meatless meals. Yay! I've been searching for meatless meals that one very picky girl will eat. :-)

      Here's an easy crowd pleaser: Tomato and Peanut Stew!
      sautés small onion
      add and stir until warm:
      16 oz of fresh or canned tomatoes
      8 oz cooked or canned black-eyed peas
      When bubbling add 1-3 tablespoons of peanut butter or half cup of peanuts
      Pour over cooked rice.
