REFLECTION QUESTIONFood Zero-Waste CookingIn North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for using every part of a vegetable. How can you incorporate using an entire vegetable (including the skins, tops, stalks, etc.) during your next meal prep?
Cristina Guzman-Moumtzis 3/09/2021 4:49 AMA lot of the youtubers I follow (like Binging with Babbish) explain how you can use every part of whatever your using. Like most people, I think my issue is using all of the vegetable or fruit when cooking. For my fruits, I can use leftovers (like banana peels) as fertilizer for my plants (simply put the banana peel in a water overnight and use that water for your herb garden), items going out of date for baking (like banana bread or apple pie), and try to minimize what goes into the compost bin by buying only what I need. For my vegetables, skins are great for making homemade broth and I find these to be much better (and lower in sodium) than store bought ones. Buying 1 or 2 veggies instead of a bag is great to limit food waste (since you usually only need a couple) and whatever I have extra I try to grow (like green onion, its easy to grow these and it keeps the bunch going forever). -

Cristina Guzman-Moumtzis 3/09/2021 4:44 AMNo outstanding significant experience but I find that being able to tend to a garden and simply sit quietly outside very therapeutic. I can research what my plants need, experiment to improve their health, or simply enjoy their growth. Gardening is what you make it. -

- I would love to buy from local shops and I did before COVID so I'll hop back onto that when things open
- I should try to balance the tasks and it would be interesting to see what challenge I have a bias for
