    The past couple of days has gone well regarding the challenge. I have kept up with my two vegan meals per day and have really practice saying no to things I do not need. I have started shopping second hand for things that I do need and have save a lot of money doing so.

    Today, I meal-preped again before the game so that I didnt have to eat animal products or buy any food that was covered in plastic. Even though I wanted the McDonalds, I turned it down and had my vegan sand-which instead!

    Today, i had to travel elsewhere for a sporting event around dinner time. I knew there was a fast food restaurant on the way, and that the people I was with were planning on stopping there for dinner. Luckily, I planned ahead and was able to pack a vegan dinner(a veggie loaded sandwich with vegan mayo) for the road. I was really proud of myself for saying no to the fast food to not only keep my meal vegan, but to also reduce waste.

    Today, instead of using coffee pods (K-Cups), I decided o use my french press instead with some fair-trade coffee (the brand is Peace Coffee) I picked up at my local Co-op! I really love this coffee and have been meaning to use my french press more, but it is just so much easier and quicker to pop in a K-Cup and call it good. The coffee tasted so much better in my french press and I am going to push myself to use this option for my coffee rather than be wasteful.

    Today I was a bit more creative with my vegan meals! For breakfast, I made so Tofu scramble with some toast and vegan butter. I was really proud of myself for making it in the place of eggs (not to mention it was really good). For lunch/dinner I made vegan ramen for myself and it was amazing. I was extremely impressed with my vegan meals today!

    Today, I did really well for eating given the circumstances. I hit my normal no meat (i'm vegetarian), and was able to meet my normal goal of 2 vegan meals. For breakfast I ate my normal vegan oatmeal with oat-milk and berries. What was challenging was trying to eat vegan for lunch/dinner at restaurant. Thankfully, the restaurant we ate at had vegan pizzas so I was able to get that but it was a stressful experience. This has definitely opened my eyes to the lack of options available at most restaurants for the varying diets.

    I have been doing well in accomplishing my goals for this challenge. One thing that I have struggled with is water conservation and only taking 5 minute showers. I hate to say it but I have always been a person that takes around 15 minute showers. I realize that this is an extremely wasteful and am working to change this. I have definitely had to speed up my routine and I feel very rushed but with time it will become a normal habit!

    I went out for dinner today with a friend before a soccer game today and made sure that the place we went too had vegan options. It was a bit harder than I had originally thought to try to find a place that had options for this, but I made it work. I ended up ordering a salad with a vegan coconut spicy dressing and fried tofu which was amazing. My other vegan meal for today was for breakfast and I settled on oatmeal with oat-milk, seeds, and berries.

    Today, I went shopping to buy dress pants I needed for a new job I am starting tomorrow. The store was having a 50% off store wide sale so it was a bit of a struggle for me to just buy what I needed vs. what I wanted. I had to remind myself of what I came in for, and that I did not need anything else. I'm trying to get out of just buying thing because I want them, when in reality I have no need for them at all.

    Today, I ate 2 completely vegan meals. Being home, it's a lot harder to cook vegan meals so today was a bit of a challenge. For breakfast I had a nice big bowl of oatmeal with oat-milk, chia seeds, pumpkin seeds, and almonds (all from my local co-op). For lunch, I cooked up some delicious sweet potato fries. Though it is a bit harder, I want to push myself to go further and possibly cook three vegan meals. I want to push myself to find different vegan recipes that are locally and sustainably sourced.
