Why do people in richer countries eat more meat than people in other places? How does eating more meat affect our planet and other people?

I would assume people in richer countries eat more meat than people in other places because, in general, the cost of meat is expensive, and usually more expensive than other foods. I know ground beef is particularly terrible for the environment with how it is produced. To cope with this, I never eat ground beef from a store, and instead either try to cut down on the amount I eat. When I do occasionally eat it, I go to a local farmer to get only the amount of meat I need, then I grind the meat myself at home with a hand-powered meat grinder. I do the same with sausage, and I am sure to never waste any of the meat I buy.
