    Canning and pickling food is a great way to have delicious summer fruits and vegetables all year round. Just make sure to follow the canning and pickling guidelines from the USDA or another trusted source. What are some foods that you would like to preserve and enjoy later in the year?

    I enjoy experimenting with recipes, and so this one was pretty fun. My sister and I tried soaking cashews as a vegan "cream cheese" to make a healthy salted caramel cheesecake, and it was so good! I hadn't tried that before, but I definitely want to try it again.

    Mindful eating is healthier for us than eating with distractions. How do your eating experiences differ when practicing mindfulness?

    At times, this task is more challenging than I first suspected, especially now that I do quite a bit of work in front of a screen. I try not to eat in front of a screen often, but if I do, I find both positives and negatives. I tend to eat slower but I also tend to eat mindlessly. It's easier to keep snacking and overeat because I am distracted by the computer and not feeling when I am full. Depending on the type of snack, it could lead to less healthy eating. I can easily see how it could develop into a bad habit and maybe even lead to stress-eating. This task is great for developing mindfulness, especially now when computer-use and multi-tasking is so prevalent.
