    I went camping with some of my friends at Trillium Lake and we spent the day paddle boarding and hiking and it was genuinely the most fun I've had in a long time. I was so grateful for the time spent disconnected from technology and enjoyed being in nature with some of my closest friends.

    How does eating more fruits and vegetables and less meat positively affect yourself, other people, and our planet?

    Eating more plants and less meat has changed me more mentally than physically. The simple substitution of meat for beyond and impossible meat has actually been really easy. I started cutting red meat and fish out of my diet last summer and it is a lot more realistic than I thought. Now I am eating healthier and contributing to less meat production. I have also inspired my family to eat less meat as a result of this and it is really special knowing that that was something I helped them do.

    My sleep schedule has been so horrible lately and I'm constantly waking up tired and unfulfilled. I took these last two days to go to bed early and sleep in and my energy has immediately bounced back.
