Jonna Korpi 4/26/2021 5:38 AMThere’s not just one, just as there’s not just one action that will solve the environmental/climate crisis. But if o had to choose one, then it’s not disposable items, but treating people as if they are disposable. If you treat all people like they matter and have value and take their health, livelihoods, and ability to thrive into consideration, then we don’t have overflowing landfills, toxic waste sites, oil refineries in backyards like Cancer Alley—and that these places overwhelmingly affect communities of color shows a blatant disregard for human life. -

Our water goes to the Great Lake and if we’re adding stormwater, then it’s house. Hillside. Buckingham creek. St. Louis river then Lake Superior. A lot of water and a lot of important ecosystems. -

Also, working to build up my sharing network, especially for larger items like a garden tiller or cider press or recreational gear (backpacking equipment, canoes/kayaks, skis, etc). Individual ownership is overrated! Especially when a thing is used only occasionally and can easily be borrowed out or borrowed from someone in the network. -

REFLECTION QUESTIONHealth Reduce refined sugarBefore you started this challenge, did you think you were 'addicted' to sugar? How do you feel now?
Jonna Korpi 4/20/2021 8:31 PMI didn't feel like a sugar addict...but I knew that I was taking in more than I needed and honestly, still am. That's what I appreciate about this challenge -- not asking/expecting you to quit cold turkey. I have certainly been more aware of my sugar intake and have probably cut it in half in the first week of this challenge. Will keep working on it! -
REFLECTION QUESTIONFood Reduce Animal ProductsWhy do people in richer countries eat more meat than people in other places? How does eating more meat affect our planet and other people?
Jonna Korpi 4/13/2021 7:32 PMEating less meat is not as complicated as some people might think -- I've eaten 5 meatless meals in the last two days...oatmeal for breakfast, soup and bread for lunch, avocado toast, a hearty salad with beans and really good cheese shredded on top. It's all stuff I love to eat anyway, it just seems to take a little more intention some days. I was raised on meat and potatoes -- it's hard some days to create dinners that feel like what I grew up eating. And some days, I make a pot roast! It's a balance -- but if you make REALLY good, TASTY food it doesn't matter so much if there's meat -- it matters if you enjoy eating it. FInd the joy!-
