REFLECTION QUESTIONFood Zero-Waste CookingIn North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for using every part of a vegetable. How can you incorporate using an entire vegetable (including the skins, tops, stalks, etc.) during your next meal prep?
Rebecca McCartney 4/23/2021 8:06 AMIn my house, we save all our vegetable scraps in a ziplock bag in our freezer to boil into vegetable stock. We make a few quarts at a time and store it in large mason jars. This keeps us form having to buy stock for making soup, and helps us cook down our veggies before composting them! Excitingly, we can do this with onion/garlic skin, as well as any sort of peels we take off our veggies.
