    THe more loving-kindmess mindful you are, the more you have respect for others and the earth. This will help foster a sense of gratitude for the things we have. less will be taken advantage of and less waste.

    Before you started this challenge, did you think you were 'addicted' to sugar? How do you feel now?

    Everyone is addicted to sugar. There is refined sugar in everything and the only way to reduce consumption is choosing more whole food options prepared simply. sugar makes you feel like crap and most people have gotten used to feeling like crap.

    Eating more fruits and vegetables is better for our health and the health of the planet. produce agriculture has less envirnomnetal impact than fish or meat. Fishing and meat agriculture is killing the planet.

    What is one food choice that you make, or could make, that would do more good and less harm?

    Locally sourced meats would be more ethical because animals on a small scale farm will have a better life. Also healthier than the large scall meat farms that have to use antibiotics. IT is also good to support small local farmers so that they can keep making the quality nutritious options.

    In North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for using every part of a vegetable. How can you incorporate using an entire vegetable (including the skins, tops, stalks, etc.) during your next meal prep?

    I usually do not eat the stems of some fruits and vegetables but I dont send them to the landfill either. Its easy to use the whole fruit or vegetable but if there are parts that you absolutely do not eat just compost it.

    Canning and pickling food is a great way to have delicious summer fruits and vegetables all year round. Just make sure to follow the canning and pickling guidelines from the USDA or another trusted source. What are some foods that you would like to preserve and enjoy later in the year?

    Pickling is super easy. You can make your own dill pickles with cucmber or you can make a giardiniera with carrots, peppers, garlic, cauliflower, celery and whatever else you would like to throw in there.

    What would a sustainable water future in your region look like? What needs to change?

    If its yellow let it mellow. There is well water in my region and aquafers but if they are overpumped then there is an issue. we get water from lake michigan but the water near the shore is so polluted water comes in from a mile long pipeline.

    I always wash with cold water anyway because it keeps the colors vibrant. I didnt even think about the energy that would go into heating the water for the wash.
