Kate Schafer 4/28/2021 3:30 PMDiana Moss and Ayana Elizabeth Johnson have both inspired me to start speaking out about the motivations of my actions more. There is a feeling in our society, I think, that we shouldn't talk too explicitly about choices around sustainability because it might make others uncomfortable. But it turns out that we all worry about that but want to hear about the actions that others are taking. I am joining a new school next year because of my commitment to working hard on issues related to sustainability...and I am really trying to talk about that openly. -
REFLECTION QUESTIONFood Zero-Waste CookingIn North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for using every part of a vegetable. How can you incorporate using an entire vegetable (including the skins, tops, stalks, etc.) during your next meal prep?
Kate Schafer 4/22/2021 2:58 PMWhen I am preparing a meal with lots of vegetables, I try to save the parts that I'm not going to eat (leek tops, peels, onion skins, etc) to make veggie stock. Those bits still end up in the compost when I'm done making the stock, but I feel like I've at least maximized the nutritional value of the food I've purchased. -

Kate Schafer 4/21/2021 1:02 PMMany of the biggest health problems in the U.S. are directly linked to diet. Access to nutritious and delicious food improves the health of people and, if done well, improves reduces green house gas emissions. We need to work on a complete overhaul of the 2023 Farm Bill.-
