Food
Learn ways to reduce food waste in the kitchen
I'm interested in reducing food waste, so I watched some videos on root-to-stem cooking & easy fermentation. Next up, pickling & canning!!
Food
Locally-Sourced Meals
I will source 1 meal(s) each day from local producers.
Food
Try a New Way to Prep
I will try a new method of food preparation, such as canning, pickling, or baking bread.
Food
Weekly Meal Planning
I will reduce food waste and save money by planning a weekly menu, only buying the ingredients I need.
Food
Choose Organic Ingredients
I will enjoy 1 meal(s) cooked with organic ingredients each day.
Simplicity
Eat Mindfully
I will eat all of my meals without distractions, e.g., phone, computer, TV, or newspaper.
Health
Happiness
I will write down three things every day that I am grateful for, or send one email every day thanking or praising someone.
Community
SIGN UP TO VOTE
I will make sure I’m registered to vote. While I’m at it, I’ll sign up to help others register too!
Health
More Fruits and Veggies
I will eat a heart healthy diet by adding 1 cup(s) of fruits and vegetables each day to achieve at least 4 cups per day.
Community
Support Businesses Owned by People of Color
Racial inequity is both a sustainability and justice problem. I will support businesses owned by people of color in my community whenever I shop.

REFLECTION QUESTIONCommunityA recent Keen Independent Research Foundation study found that Minority Businesses Enterprises (MBEs) are more likely to have difficulties in receiving loans or city contracts. In what ways can you work to address systemic racism like that demonstrated in this study?
Elijah Garrard 4/25/2020 8:21 PMIt's hard to know where to start with systemic racism, especially when we're talking about a specialized field. Many small businesses are hurting now & will be needing loans, so it's going to be more important than ever to support them as advocates as well as customers. -

REFLECTION QUESTIONFoodMany people say that “you can’t feed the world with just organic food.” How would you respond to that statement?

REFLECTION QUESTIONSimplicityMindful eating is healthier for us than eating with distractions. How do your eating experiences differ when practicing mindfulness?
Elijah Garrard 4/22/2020 10:45 AMFood isn't just nutrition, it's tradition & culture! Meals are a time to heal and connect with other folks at the table -
REFLECTION QUESTIONFoodIf you were to only eat what is in season locally from now on, what would be the most difficult food item for you to give up? Why?
Elijah Garrard 4/22/2020 10:44 AMCoffee :(
probably followed by luxurious tropical fruits & avocados -
REFLECTION QUESTIONHealthHow does eating more fruits and vegetables and less meat positively affect yourself, other people, and our planet?
Elijah Garrard 4/21/2020 11:06 AMA lot of folks in my life are vegetarian already, so it's never been a meat-vs-fruit/vegetables situation. It's tough because grains and starches are cheaper, and easy to justify buying in bulk. With fruits & veggies there's always the fear of waste. -

REFLECTION QUESTIONFoodAn average American throws out about 240 lbs of food per year. The average family of four in the US spends $1,500 a year on food that they throw out. Does this surprise you? Where would you rather use this money?
Elijah Garrard 4/21/2020 10:58 AMIt's been cool to plan meals with an eye to root-to-stem cooking, which I've only just started learning about! I'd been eating broccoli stems for years, but only to save money ;/
