    March 22, 2021, the Pledge to Go Green team will recruit more members and push hard for one month to try to live a more sustainable life, and promote sustainability to others. On Earth Day April 22, 2021 we will celebrate our sustainability efforts with a raffle for those who participated. (Photos from our event in fall 2019)

    On Oct 6, 2020 Viterbo had a Promise to Humanity Farmers Market. We signed up 120+ students and employees to promise to wear a mask, wash her hands, practice social distancing to help the global Coronavirus pandemic. I also signed up 60 more individuals to the Pledge to GO Green Eco Challenge!

    Food Try a New Way to Prep
    Canning and pickling food is a great way to have delicious summer fruits and vegetables all year round. Just make sure to follow the canning and pickling guidelines from the USDA or another trusted source. What are some foods that you would like to preserve and enjoy later in the year?

    I enjoy experimenting with recipes, and so this one was pretty fun. My sister and I tried soaking cashews as a vegan "cream cheese" to make a healthy salted caramel cheesecake, and it was so good! I hadn't tried that before, but I definitely want to try it again.

    Good Job Viterbo University! In 2019 we reduced printed sheets by 77,000, resulting in using 1 less tree, consuming 350.7 less CO2, and using 22,000 less bulb hours, from 2018 measurements.

    By saving 8.4% of paper usage in copiers and printers on campus during 2018, we also saved the number of trees consumed by 2, CO2 produced by 704.8kg and  bulb hours used by 44,377.9 hours.

    Waste Go Paperless
    Reducing your paper mail can reduce mental clutter as well as physical waste -- by reducing what is coming in, you can reduce what is going into the recycling bin too. How does it make you feel? What is the next step you will take to reduce your waste?

    As a campus, we reduced our paper usage in our copiers and printers by 8.4% in 2018 compared to 2017.

    Simplicity Eat Mindfully
    Mindful eating is healthier for us than eating with distractions. How do your eating experiences differ when practicing mindfulness?

    At times, this task is more challenging than I first suspected, especially now that I do quite a bit of work in front of a screen. I try not to eat in front of a screen often, but if I do, I find both positives and negatives. I tend to eat slower but I also tend to eat mindlessly. It's easier to keep snacking and overeat because I am distracted by the computer and not feeling when I am full. Depending on the type of snack, it could lead to less healthy eating. I can easily see how it could develop into a bad habit and maybe even lead to stress-eating. This task is great for developing mindfulness, especially now when computer-use and multi-tasking is so prevalent.
