    This has been the most important challenge I think I have partaken in so far. My family and I were going through the process of Hospice with my Grandfather, saying goodbye and unfortunately we had to bury him this week. I have been overwhelmed emotionally and mentally. There have been many rough days but this challenge helped me find a small part of the day to try and be happy or think positively. My grandmother smiled when she saw my notes and it ended up cheering up the whole family each day.

    In North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for using every part of a vegetable. How can you incorporate using an entire vegetable (including the skins, tops, stalks, etc.) during your next meal prep?

    Today I made a simple stir fry. With mushrooms, cherry tomatoes, broccoli and few other veggies. I found it incredible that it was not too difficult to remain zero waste with my ingredients. I researched and found smart techniques to saving the additional remains of veggies to make vegetable stock or soup. I am planning on using this technique in the future.
