April 22 at 2:58 PMWhen I am preparing a meal with lots of vegetables, I try to save the parts that I'm not going to eat (leek tops, peels, onion skins, etc) to make veggie stock. Those bits still end up in the compost when I'm done making the stock, but I feel like I've at least maximized the nutritional value of the food I've purchased.
