    I certainly pay more attention to my surroundings and notice things that I normally wouldn't when driving, especially because I can look everywhere and go places more slowly.

    I would say that I deeply agree with Berry's assertion because when you choose to celebrate something, no matter how beautiful or big, that you think is promised to you (but actually isn't), you instantly become more grateful and prone to enjoy life's pleasures.

    I like to think that spending time outside is like a walking meditation. Focusing on what you hear, see, smell, what you can touch and taste will connect you even more deeply to your surroundings.

    I like to incorporate every part of the vegetable or fruit I'm eating into my meal prep by making stir-fries, for example. It is a simple and delicious way to do so.

    I agree with Rachel Carson. People who don't spend time outside could not only have physical health implications (like lack of vitamin D from the sun, etc.) but also mental health implications, like feeling disconnected from themselves and their surroundings.

    Food is medicine. If you ingest nutritious, organic, and soul-fulfilling foods, in my opinion, you will live a much healthier lifestyle (in all aspects of your life).

    Eating mindfully has allowed me to focus on what foods I am putting in my body and allows me to take more time to eat! It it very interesting to know all of the background information to grocery store foods now that we have learned so much about it.

    Writing down three things that I am happy about each day has taught me to appreciate the smaller things! I am also able to devote my time to something other than my electronics which is very beneficial and I can put it towards my eco challenge as well!

    Having a reusable water bottle has been awesome because I know that I am reducing my plastic waste as well as staying motivated to be hydrated and keep filling up my water bottle. :)
